They specialize in funky, sour barrel-aged beers that take some time to make but are well worth the wait. Using old-world brewing techniques and fresh local fruit imparts their beer with complex and tart flavors you won't find anywhere else. So if you're looking to explore the world of sour beers, check out California Wild Ales! They also have three cute mascots which adorn their wide variety of craft beers, known as the Wildings. The little guy with two eyes is named Lacto (short for Lactobacillus), the big guy with a smile across his face is Brett (short for Brettanomyces), and the medium guy with the mischievous grin is P.D.O. (short for Pediococcus). In celebration of Star Wars Day on May 4th, California Wild Ales released a whopping 15 unique beers for you to try! Some of these beers have been aging in barrels for around 12 months, expertly crafted and brewed to perfection. OB-One is their flagship beer for this set and is considered their anniversary beer celebrating their first year in Ocean Beach. By resting tons of handpicked fruit on their Golden Sour for two months, they allowed the flavors to meld. This imparted passion fruit and prickly pear flavors into the beer, and blueberry gives it a slight tartness that refreshes the palate with every sip. But it’s not all sour beer at California Wild Ales. They’ve also released their Bike Lane Lager, which features German Pilsner, malted wheat, and noble hops, including Hallertau Blanc, Magnum, and Saaz. This blend of hops imparts a clean and crisp flavor. Though relatively mild and delicate, Saaz hops impart a distinctly earthy and herbal flavor to the beer that has come to define the Pilsner.
